Galletitas de Navidad / Gingerbread cookies

Falta tan poco para Navidad!! Qué mejor que preparar galletitas para darle a tus seres más queridos? Las galletas hechas con amor, dedicación y entusiasmo resultan mejor!!

Para 3-4 docenas de galletas
Necesitamos:

- 3 tazas de harina
- 2 cucharaditas de jengibre en polvo
- 2 cucharaditas de canela
- 1 cucharadita de bicarbonato de sodio
- 1/4 cucharadita de clavo de olor
- 1/4 cucharadita de nuez moscada
- 1 y 1/2 tazas de mantequilla 
- 1 taza de azúcar rubia o granulada
- 1/4 taza de chancaca derretida
- 1 huevo

Para el glaseado real
Necesitamos: 

- 2 claras de huevo
- 500 gramos de azúcar flor

Preparación de las galletas:

En un bowl mediano, mezclar los ingredientes secos (desde la harina hasta la nuez moscada) y reservar.
En un bowl grande batir la mantequilla con el azúcar hasta obtener una mezcla cremosa y luego agregar el huevo y la chancaca. bajar la velocidad de la batidora (aunque tambien esto se puede batir a mano) y agregar los ingredientes secos. Batir hasta incorporar. 
Sacar la masa del bowl y envolverla con papel plástico y refrigerar por 1-2 horas.

Precalentar el horno a 180 grados y poner papel mantequilla en la lata del horno y enmantequillar.

Sacar la masa del refri y uslerear en una superficie enharinada. Si ven que la masa está un poco húmeda, ir agregando harina como sea necesario. Estirar la masa hasta alcanzar un grosor de 1/2 centímetro e ir cortando figuras. Colocar las figuras en la lata del horno y hornear por 10 minutos. repetir el procedimiento hasta terminar con la masa. 
Decorar con glaseado real.

Preparación de el glaseado real:

Mezclar todo en un bowl, hasta alcanzar una consistencia espesa, con la que podamos decorar. Poner en una manga pastelera o una bolsa ziploc y cortar un poquito la punta.

For 3-4 dozens


Ingredients:
3 cups of All Purpose Flour
2 tsp of Ground Ginger
2 tsp of Ground Cinnamon
1 tsp of Baking Soda
½ tsp of Ground Cloves
½ tsp of Salt
1 ½ cups of Unsalted Butter, at room temperature
1 cup of Brown Sugar
¼ cup of Molasses
1 Egg

Process, 

1) In a small bowl, combine together the first 6 ingredients and set aside.

2) In the bowl of a standing mixer fitted attachments, cream together the butter, sugar and molasses for 1 minute or until very smooth and creamy. Add the egg and mix to incorporate.

3) Add the dry ingredients and mix everything together until a sticky dough forms.

4) Dump dough onto a well floured board and just kneed it enough to form a ball. Cut the dough in 4 pieces and wrap each piece in plastic wrap and refrigerate for 1 hour or until firm.

5) Preheat the oven to 350 and lay some parchment paper on you baking sheets and set aside.

6) Take 1 large piece of parchment paper and lay in on your counter, dust generously with flour and put one piece of the dough in the center. Dust the top of the dough with flour and place another piece f parchment paper on top. Using a rolling pin roll it out until the dough is about 1/8 inch thick.

7) Using a gingerbread man cookie cutter, dip it in some flour and cut out your shapes. Using a spatula to help, place the cookies onto the parchment lined baking sheets and bake for about 10 minutes.

8) Let them cool completely before decorating to your like with some royal icing
